The monthly theme was "Appetizers!" I managed to make it to the Cooking Club for this one, and I'm here to tell ya, this recipe is to DIE for! Enjoy!!!
Jalapeno Poppers - submitted by Megan
6 green chilies (do NOT use jalapeno peppers! I did and it was way too HOT! It punished me!)
1 cup diced cubed cheese
12 toothpicks
Batter:
1 cup all-purpose flour
1-1/2 tsp baking powder
1 tsp salt
2 Tbsp chili powder
1 tsp cumin
1/2 tsp cayenne pepper
1/2 tsp pepper
1 egg white
3/4 cup beer
First slice chilies to make each one 6 square pieces. Put one cube of cheese onto each piece and put a toothpick through it. Freeze for 1 & 1/2 to 2 hours. In deep fryer or 3 quart saucepan, heat 2 inches of oil to 375 degrees. While chilies are freezing, prepare batter as follows: In medium bowl combine all batter ingredients except egg white and beer. In small bowl beat egg white at medium speed until stiff (2 to 3 minutes). Set aside. Stir beer into flour mixture; fold in egg white. Now pull out chilies and dip into batter. Place in hot oil and fry until golden brown. Remove from oil and drain on paper towels; pull out toothpicks. For added flavor, mic 1/4 cup green onion, 1 cup sour cream and serve as a sauce for dipping.
