Recipe of the Month for February 1999!



Welcome to our Cooking Club Archives.
The Cooking Club theme for this month was "Salads".
This month's winner was submitted by Stephanie ... who also happened to be the hostess! Congratulations!
Here you go - and Happy Eating!





Stephanie's Spinach Salad

2/3 c vegetable oil
1/4 c red wine vinegar
2 tsp lemon juice
2 tsp soy sauce
1 tsp sugar
1 tsp dry mustard
1/2 tsp curry powder
1/2 tsp salt
1/2 tsp seasoned pepper
1/4 tsp garlic powder
1 10-oz pkg spinach, torn into bite-size pieces
5 bacon strips, cooked and crumbled
2 hard boiled eggs

Combine first 10 ingredients in a jar; cover tightly and shake until well mixed; set aside. Place spinach in large salad bowl. Just before seving, pour dressing over spinach and toss gently. Garnish with crumbled bacon and egg slices. Serves 6 to 8.
