Recipe of the Month for July 1999



Welcome to our Cooking Club. **

The Cooking Club was cancelled this month, so there is no theme, but the following recipe was submitted by Nancy, our Coordinator. Bon Appetit!

Tortellini in Balsamic Vinaigrette

1 pkg (9 oz) refrigerated tricolor cheese filled tortellini
Balsamic Vinaigrette (recipe below)
1 med carrot, sliced
2 cups broccoli flowerettes
2 green onions, sliced

Cook and drain tortellini as directed on package. Rinse with cold water; drain.
Prepare balsamic vinagrette in large bowl. Stir in carrot, broccoli and onions. Shir in tortellini. Makes 4 servings.

Balsamic Vinaigrette

1/4 cup balsamic or cider vinegar
1 Tbsp chopped fresh basil (1 tsp if dried)
2 Tbsp olive or vegetable oil
1/4 tsp paprika
1/8 tsp salt
1 clove garlic, crushed
Mix all ingredients
