The Cooking Club was actually cancelled this month, so there was no recipe selected. The theme was going to be "Indian/Middle Eastern made easy", so I was sorely disappointed. So... for this month I will just "pop" this one up here (excuse the pun!)! This recipe actually came across the MOMS Club President's Mailing List! Enjoy!!!!!!!
Old Time Popcorn Balls
20 cups popped popcorn (about 1 cup unpopped)
2 cups sugar
1 cup water
1/2 cup light corn syrup
1 tsp white vinegar
1/2 tsp salt
1 tsp vanilla
Remove all unpopped kernels from the popped corn. Put popcorn in large roasting pan, keep warm in 300 degree oven. Butter the sides of a 2 quart saucepan; in it combine the sugar, water, corn syrup, vinegar & salt. Cook to 270 degrees (soft crack stage), stirring frequently (mixture should boil gently over entire surface). Remove from heat; stir in vanilla. Slowly pour mixture over the hot popcorn. Stir just until mixed. Shape with buttered hands into 2 & 1/2 to 3 inch balls. Makes 13 to 15 balls.
